Potato Salad

I was recently given some extra Farmer's Market goodies by a neighbor who was going on vacation. Red-skinned potatoes and farm fresh eggs. I decided to make a super easy homemade potato salad and wanted to share our recipe for Menu Plan Monday.

Potato Salad

4 cups diced potatoes, scrubbed

6 eggs
1 c. light mayonaise
4 Tab. yellow mustard
2 Tab. apple cider vinegar
Salt to taste
Optional: chopped celery or onions

Boil the potatoes and eggs for approximately 20 minutes. Dice the potatoes and peel and dice the eggs. Mix together the mayonaise, mustard and vinegar. Add salt to taste. Dress the potatoes and eggs. Cover and refrigerate until well chilled.
