No Bake Cookies

Whenever cooler weather arrives, I get an unexplained craving for No Bake Cookies. I am always challenged with these cookies because I have about a 50% success rate as far as them setting up correctly. But, I'm not going to lie, I will just eat it with a spoon if it doesn't firm up!

For Menu Plan Monday, I thought I would tempt you with these as well.




No Bake Cookies

1 3/4 cups white sugar
1/2 cup milk
1/2 cup butter
4 T unsweetened cocoa powder
1/2 cup peanut butter
3 cups oats
1 tsp vanilla extract

Combine milk, butter, cocoa and sugar in a saucepan and bring to a boil. Boil for 1 to 2 minutes. Remove from heat and stir in peanut butter, oats and vanilla. Spoon onto wax paper and let cool.

  1. Mmmmm, my favorite cookies! Sometimes I like them with some crushed peanuts in addition to the peanut butter. They are tricky to get right... Maybe it has something to do with how much humidity is in the air at the time?
