Summer Squash







It’s summer time! One of our favorite things about summer is all the local fresh fruits and vegetables. My family loves summer squash! We have found many ways to cook squash including steamed, fried, grilled, or casseroled. Today, I would like to share my mom's squash casserole recipe.

Squash Casserole Recipe

3 yellow squash cut in small chunks
¼ cup diced onions
½ stick of melted margarine
1 can cream of chicken
1 cup sour cream
¼ package of Pepperidge Farm Dressing Mix

Cook squash and onions in a small amount of water or steam for 10 minutes. Drain squash and onions and add cream of chicken, sour cream, and salt and pepper to taste. Mix dressing mix with melted margarine. Place ½ of the dressing mix in the bottom of a greased casserole dish. Place squash mix on top and cover with the remaining dressing mix. Preheat oven to 350 degrees and bake for 30 minutes.
